The "knock out" happens only when the contours run in opposite directions. Layers > Correct Path Direction would be the easiest way to fix it. You can also reverse contour direction by C…1 -

Anchor placement is another area where the interface in Glyphs is much more useful than FontLab's.1 -

I have used "OGRE DASH vegan stop" and "Elephant dung silo" but "Hamburgefonstiv" is my go-to string.1
